26 /30. 金目鯛の皮の炙り Slightly Grilled Kinmedai Skin (white shari) @ すし匠 Sushi Sho, Tokyo. Top with oroshi (grated daikon). Another of the 3 must-have sushi at Sho in my opinion. Nakazawa san used the side areas closed to the fins with a lot of skin and fat, hence it was sipping out with oil after slightly grilled. Always the most luscious texture and delicious.
