Sushi Shibucho in Costa Mesa: Aburi shiro maguro. Seared albacore. One of the cheaper fish that, if done right, can be elevated to a faux luxury. This piece was a great example. Moist, soft, but not mushy at all. Grated daikon to hold the ponzu provided good levels of umami and salt with some acid to cut the buttery oil content of the flesh.
