[15'6|7] Uni, Yuzu, Nori, Crunchy Rice, Shiso 馬糞海膽, 柚子, 海苔, 脆飯, 紫蘇 @ ACHOI // Crunchy rice wrapped with paper thin nori, deep fried. On top were tiny uni tongues neatly piled up. Uni was fresh but not creamy nor sweet. Foam on the side was comprised of yuzu sauce which added a sour tang to the dish. Finished in two giant bites. 酥炸的海苔包飯有著ㄧ點味增味(沒記錯的話), 上頭的海膽是北海道的馬糞海膽。馬糞海膽通常是較深的橘色,表面的細緻程度代表的是新鮮程度。ACHOI 的海膽有對的顏色和對的質感,但跟我所知道的好吃的海膽有著ㄧ個關鍵的差別,那就是鮮味太重、不夠甜也不夠綿密。整道菜的份量很小,兩大口就吃完了。($720NT)(7/10)#meg_uni#meg_sashimi#台北finedining by eatwith_megan http://bit.ly/1KNhbL1
