Hotaru Ika @ すし喜邑. When spring comes, not only is the cherry blossom highly anticipated, people also look forward to the arrival of the firefly squid. The various times I have eaten hotaru ika, it was always in some form of dressing or sauce...mustard with rape or in miso or soy sauce. This time, it was served simply with its freshness as the prime attraction. Texture was perfect, not overly chewy & the briny flavor mixed with a slight bitter tang. by dingmeiser http://ift.tt/1PEkbzJ
