Please take a look at this sushi (my friend's) and see if you notice the problem without me telling you. (If you are a sushi person you should be able to tell right away). Yes, there is shari on the neta....... For any high caliber sushi, this would be an terrible mistake by sushi chef. If it was an occasional one I could look away. Unfortunately for the whole night the shari has not been performing too well. The lack of flavor and the loose texture were noticed since the first piece. And shape and size of the shari were also inconsistent. Some pieces sushi as a whole were too wet, and the shari were too soft and the rice grains or the neta fell apart when I tried to pick it up with my fingers. The flavors of the neta and ingredients had no problem (except for the rather vicious glaze), and the otsumami were very good, so I have no doubt on the quality of the ingredients that Sato San sourced. He is very kind and friendly, but I do not want to lie about the sushi here. Because when it comes to sushi, I focus a lot on nigiri skills and shari and not just having fresh tasty fish (which is what a lot of people care more....).
