Sashimi Galore: 23. 金目鯛炙り握り( 肝添え) Slightly Grilled Kinmedai with Livers Nigiri Sushi @ 寿司栄 Sushi Ei, Chiba, Japan. This was my own piece of kinmedai with liver sushi. Immediately when it landed on my tray I spotted the problem. There were already some rice grains fallen of the shari on the tray.....😓😓😓 So I did try to pick it up to try to hold as much rice together as possible. Another issue which wasn't noted in the previous post was the ratio of neta to shari. I am not big on having outrageously thick neta just because the fish tasted good and you can have more. I want balance, and here the fish were always sliced so thick and long. It may be a crowd pleaser, but not the way I prefer, even though this piece of grilled kinmedai with liver tasted fantastic. by little_meg_siu
