My favourite Korean dish: Yukhoe. I.e. Korean beef tartare. It is made with the most tender part of beef, thinly julienned with the fat removed, then mixed with seasonings (usually soy sauce, sugar, salt, sesame oil, spring onion, minced garlic, sesame seeds, black pepper and julienned bae (Korean pear)) and raw egg.
