10. 菊子 Kikugo (Fugu no Shirako aka Blowfish's Milt) @ みかわ是山居 Mikawa Zezankyo, Tokyo. When I bite into the tempura, there was literally smoke coming out and shirako oozing out from the crust. The tempura crust for shirako here was one of the best I have had yet, very tightly adhered through out to the shirako with no gap, and nothing fell apart as I ate along. It was piping hot and creamy, like eating a hot cream. I didn't need any sudachi really, just a touch of salt was enough. There is only one person who can fry fugu shirako in such perfection.
