15. 握りすし8 車海老@ 鮨さいとう Nigiri sushi 8: Kuruma Ebi (Prawn) @ Sushi Saito, Tokyo. This shrimp was also back in the game compared to last time! I was pretty high at this point after all the pieces seemingly hitting the point and they all turned out better than last time. I still don't understand what potion Saito san added to his kuruma ebi, but it always came out so sweet and packed with umami, perfect in texture.
