Torigai (Cockle) and Hotate (Scallop). Torigai is super sweet with a light crunch and Hotate is incredibly fresh and superbly crunchy. I enjoyed both with a slight touch of sea salt which gives it a kick to another dimension. This is why Japan is the most Michelin starred country in the world.
