14. 握りすし8 車海老@ 鮨さいとう Nigiri sushi 8: Kuruma Ebi (Prawn) @ Sushi Saito, Tokyo (both 9th visit 4.7.2015 and 10th visit 5.19.2015). I always say Saito San's kuruma ebi sushi is the sweetest shrimp sushi I have had, and a rush of sweet shrimp juice and umami from the flesh and head miso immediately went to head each time I put into my mouth. I told Saito san every time I think this is the most delicious kuruma ebi sushi in the world. This time I finally asked Saito san how he cooked his shrimps. And he said he just boiled them. Then I asked if he boiled with dashi? And he said he just added salt. I said, "Just salt? How can it be sooo sweet?" He said, "and Ajinomoto (MSG)". All we all burst in laughters. (Of course he clarified clearly he was just joking) And we were saying, that has to be the secret of all chefs XD. Saito san, I know you didn't put ajinomoto in. YOU are the ajinomoto.
