1. ツマミ1. 真子鰈 Tsumami 1: Makogarei (Mako-flounder) @ 鮨さいとうSushi Saito, Tokyo (10th visit, 5.19.2015). I say the only reason why people say white fish is bland is because they didn't have good ones or at the wrong place. Like these two undorned pieces of makogarei. It has such a pure delicate sweetness, just a little salt or shoyu elevated them into elegant and delicious sashimi. Kind of like a beauty without any makeup.
