And here is what brings people all the way to #sushimasa . Their #fish . Fresh and expertly sliced as #sashimi , on the left is some #yellowtail or #hamachi . The flesh is succulent, with a pleasing bite and a more transparent meat that reflects its freshness. On the right is #kinmedai fish or #goldeneye #seabream . Despite the name, this deep sea fish is not part of the sea bream family but is similar in texture and flavor. Here the fish is lightly seared on one side with a touch of chilli paste. The fish is sweet with a slightly crunchier bite than a red snapper. The searing adds another dimension to the texture.
