12. 握りすし5：中トロ (大間) @ 鮨さいとう Nigiri sushi 5: Chūtoro (Medium Fatty Tuna) from Ohma @ Sushi Saito, Tokyo. The tuna from Ohma was noticeably higher in quality compared to my previous visits at Saito, and this chūtoro hit my senses with this optimal balance of fish oil and maguro flavor.
