One of the reasons why I love sitting at the counter at Matsukawa besides talking and asking questions to Matsukawa san who always give me immediate educational responses is that I can see him prepare some ingredients for the next service. Last time in April we had the giant akagai, the bloody ark shells, which was served with the liver and innards and ribbons in one of our courses.
