7. こはだ Kohada (Gizzard Shad) @ すきやばし 次郎 Sukiyabashi Jiro Honten, Tokyo. Sorry it took me so long to write each post hence a long interval btw each post. Now it was back to Jiro san to make nigiri (Thank God, literally, cuz he is the god of sushi). Jiro san said that the no.1 important sushi, and it is THE sushi that makes and breaks a sushi restaurant. They only keep the kohada marinated in vinegar that did not develop heavy odor of oil. Jiro san. This style of folding kohada diagonally over shari was invented by Jiro san, and he said it resembled the sitting pose of female. I really appreciate the more potent vinegar flavor from both the neta and shari by Jiro. It was one of its kind which you can't find the same in other places.
