6. ツマミ6.毛蟹、酢 Tsumami 6. Kegani (Japanese horsehair crab) @ Sushi Saito, Tokyo. This was the one that underperformed last time. But Phew~ This time it was back into the game! Fresh, sweet and flavorful crab miso complemented perfectly by the mildly sweet and vinegary kani su (crab vinegar).
