11. はまぐり Hamaguri (Boiled Clam) @ すきやばし 次郎 Sukiyabashi Jiro Honten, Tokyo. Ok for hamaguri, I can honestly say that there are only two places that have hamaguri that truly impressed, one is at Saito, and one is at Jiro here. The one at Saito was more oceanic umami with a thin layer of soy glaze on top; Jiro san's hamaguri is bigger and thicker in size which fits with his larger shari, and the glaze was thicker and sweeter. The difference makes sense if you think of the distinct shari that they use, and they are both juicy and tender and have terrific balance of sweet, savory, sour and umami flavors. Almost all the other places have hamaguri that were either off balanced or monotonous, some too thin in texture (rarely too thick cuz Jiro san's is already some of the biggest) but more often too "thin" in taste. This is for sure my favorite hamaguri nigiri sushi among all I have tried (and even I love Harutaka which practices Jiro-school sushi for this one he is not at this level yet.) by little_meg_siu_meg http://bit.ly/1AClykX
