おとろ すし・Otoro sushi @ 鮨よしたけ Sushi Yoshitake. The Toro was marinated in individual pieces right before the sushi course only for short period, due to the high fat content. Unlike the chutoro which needed a longer marination to develop tenderness. Sliced cross for sauce to soak in. By marinating relaxes it, the fat start to pull themselves apart but at just the right timing it was removed and here it is, a fatty otoro melts in your mouth. by splendorsjoy http://bit.ly/1EAT3Is
