小肌 すし・Kohada (Gizzard Shad) sushi @ 鮨よしたけ Sushi Yoshitake. Slightly firmer than the previous sushi but the flesh is still soft. The hint of vinegar and strong umami taste from the fish is persuading and memorable, cannot forget the texture and the taste until now.
