烏賊 すし・ika sushi @ 鮨よしたけ Sushi Yoshitake. Thinly sliced squid is being lightly minced by Yoshitake San in order to tenderise it and easier to grip it with the shari. Brush with salt water at last, not soy sauce which often overwhelm its delicate flavour. by splendorsjoy http://bit.ly/1EASZII
