中とろ すし・Chu toro sushi @ 鮨よしたけ Sushi Yoshitake. My favourite chutoro! The time when I had this in Shikon I was blown away with the strong fish taste, so soft and explode with umami taste. But THIS is another level UP! The gorgeous blood red flesh still taste of fresh tuna taste, and the side where the marinate cover is nicely soaked up with their perfect marinate. Two main differences between the one I had in Hk and here in Yoshitake are the freshness of the fish and the sushi master. The freshness definitely make a difference! As well as the sushi gripping technique is an art that sushi chef like Yoshitake San has practiced for long, and from this piece of sushi, I can tell how much differences it makes, by comparing the same I had in Shikon.
