寿司: 鮑 山芋 Sushi: Abalone and Yamaimo (Japanese Mountain Yam) @ 1* Ifuki, Kyoto. Just like almost all the ingredients in this kaiseki meal, the abalone is grilled first (see that hole from the skewer?), and a sushi ball is placed between two thick abalone slices with a dollop of grated mountain yam (tororo) to make a sushi. Different textures and flavors from the land and sea at different temperatures all in one bite, all in harmony.
