2. ツマミ2. 煮蛸、蒸し鮑 2. Tsumami 2. Octopus, Abalone @ Sushi Saito, Tokyo. Somewhat the signature appetizer at Saito, this course with octopus and abalone is always served, sometimes with shako (mantis shrimp). The tenderness of octopus is quite unreal, like all the fibers have disappeared, with a umamai packed sweet glaze. The abalone has a stronger oceanic flavor, also very tender, meaty and succulent.
