10. 握りすし2: 金目鯛昆布じめ @ 鮨さいとう. 10. Nigiri sushi 2: Kinmedai Kombu Jime (Golden Eye Snapper Marinated in Kelp) @ Sushi Saito, Tokyo. This is not torched but the lusciously moist kinmedai with skin attached is so ridiculously good. You can really taste that delicate sweetness of kinmedai and the fat.
