Kohada. If you have been following my ig, then you will know that this is one of my most favorite fish of edomae. I think Kohada is the piece where you will find the most difference among all sushi. The quality of the fish, the time of marination, the cutting to the final formation. Every step will make a huge impact on the presentation. The Kohada here I must admit is not my favorite style which usually I enjoyed more fatty with umami flavor instead of the high acidity.
