カワハギと肝 (熟成 4日) Kawahagi with its liver (aged 4 days) liver (2nd visit, 2.1.2015) @ すし喜邑 Sushi Kimura, Tokyo. I remember in my first visit (posts in #littlemeg_sushikimura ) it was excellent, this time both the fish and liver flavor was milder. Since the kawahagi was supposed to be paired with its liver, it was not aged as long as the other white fish. It was not the best kawahagi with liver sushi I had, but it was still very good with the vinegary shari. I think this type of sushi where the flavor developed more as you chew was a better match with Kimura san's shari as the shari size was big and rice grains were hard which required more chewing. by little_meg_siu_meg http://bit.ly/1KfSc2S
