3 pieces of 真梶木 Makajiki (Blue Marlin) from Sushi Kimura: 上:熟成なしTop: No aging (and to be aged for this month) from my 3rd visit tonight (4.23.2014). Tasted like kanten sushi fish. Bland. No flavor. Basically, taste like cheap fish :P 中: 熟成40 日 Middle: aged 40 days, from 2nd visit (2.1.2015). 10 days more of aging compared to the makajiki in 1st visit, really strong caramalized, roasted coffee flavor. Much stronger than last time. 下:熟成60 日! Aged 60 days! From 3rd visit tonight (4.23.2015). You don't even come across with fish aged that long. 60 days of aging transforming a piece of flavorless fish to this mesmorizing neta. It was like eating a dark caramel chocolate with a coffee aftertaste. Not bitter, but that kind of aroma. So complex! Holy cow!
