Wild Hiramasa (left) vs. farm-raised Hamachi (right). Both are from Japan, both are types of amberjack, but the difference in wild vs farmed fish is pretty clear. Farmed fish are raised for maximum fatty-ness, while fish in the wild have to be lean and fit to survive.
