Sawara (Spanish Mackerel) from the town of Yaizu in Shizuoka prefecture. This one had been Ikejime'd, so it arrived super fresh! The Japanese character for Sawara 鰆 literally breaks down into "fish" (魚) and "spring" (春) so it's a true springtime mackerel. The smaller Sagoshi (young sawara under 50cm) is more available now, but as they get bigger, actual Sawara will become more common.
