3. 牡丹海老 、 海老味噌と海老の子 Botan Ebi (Japanese spotted shrimp with shrimp eggs and shrimp head miso) @ すし家 Sushi Ya, Tokyo. After Ishiyama san spent all the time picking and separating all the shrimp eggs and head miso from the body, I decided to put them back altogether LOL. Why? Cuz the head miso was so good! The eggs had less flavor but they provided a popping texture. The brain was so fantastic with the meat with its cold sweet unctuousness. I wish each shrimp has 3 heads, or 4.
