16. 大とろ (和歌山) Otoro (Premium fatty tuna) from Wakayama @ すし家 Sushi Ya, Tokyo. Not as flavor explosive in fat flavor as the ones from Ohma and I won't say it was the best otoro I had, but it still had the incredibly soft mouthfeel and the sweet aftertaste from the otoro fat. But among the sushiyas at this price point this was probably one of the best. If you ask me the neta I don't think Sushi Ya is the top league. But I found Ishiyama san's nigiri skills to be improved little and little every time. Such as this time I found him being very consistent in size and texture of the shari over most pieces. In fact I found his shari to be less sticky than his senpai Kanesaka and Iwa (at least in my visits). But of course one time is never a conclusion. He has to be able to do this many many times repeatedly. It is the consistent performance that makes a sushi master, but for Ishiyama san's young tenure (10 years "only") I am already impressed. by little_meg_siu_meg http://bit.ly/1C5qXq4
