14. 赤身づけ (和歌山) Akami Tsuke (Wakayama) @ すし家一柳 Sushiya Ichiyanagi, Tokyo. Despite the shari not being big or dense, the rice grains stuck together and took me a lot time in my mouth to chew, and the saltiness with the vinegar made you palate fatigue.
