Sound the trump: it's the truffle risotto @ Providence!!! Uh-oh, I celebrated too soon I was super duper excited when the manager told me they had a fine Vialone Nano rice that day, which I know is a VERY high-quality grain (and a hard to come by one!) It soaks up moisture extra slowly, allowing each layer of the rice to cook one at a time and get nice and creamy. So I was uber excited to order my favorite dish with the best rice AND black truffles. But alas... the risotto came to me undercooked. Not just extra al dente - seriously undercooked. When I but into the grains of rice I could actually feel the gritty, seedy germ inside. It was almost like eating sand and essentially nullified any fantastic flavors. I couldn't even appreciate the truffles after I tried eating gather risotto. It completely spoiled my appetite and made the rest of the evening much less enjoyable. Luckily the GM came to the rescue and admitted that the kitchen screwed up. Maybe a stagiaire didn't have much experience with Vialone Nano?
