槍烏賊 @ 鮨いわ,東京 "Yari-Ika" (Spear Squid), Sushi Iwa, Tokyo. The same dish was offered at Saito the night before, and the difference was very noticeable. The one at Saito was very sophisticated stuffed with squid legs and body at the front end, and squid eggs at the end, with a tender and soft bouncy texture that was truly memorable. This one at Iwa was soft without any sign of energy, and it was filled with just a few little squid meat and a pool of jelly-like squid egg that seemed undercooked and was very appalling in texture. The tare was very weak in flavor, as was the squid itself.
